    Wash and chop the zucchini into small bite-sized pieces. Rinse and drain the black beans. Halve the cherry tomatoes. If using fresh spinach, wash and chop it as needed.

    In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the lean ground turkey and cook until browned, about 5-7 minutes. Make sure to break it apart with a spatula.
