    Soak the Beans

    Place the pinto beans in a large bowl and cover them with water. Let them soak overnight or for at least 6-8 hours.

    Drain and Rinse Beans

    After soaking, drain the beans and rinse them under cold water.

    Cook Beans

    In a large pot, add the soaked beans and cover with fresh water. Bring to a boil, then reduce heat and let simmer for about 1-1.5 hours or until beans are tender.

    Sauté Onion and Garlic

    In a separate pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Once the beans are cooked, drain them, reserving some of the cooking liquid. Add the beans to the sautéed onion and garlic mixture. Use a potato masher or fork to mash the beans to your desired consistency.

    Pour in the vegetable broth and mix in cumin, salt, and pepper. Stir well to combine and heat through, adding more broth if necessary to achieve desired creaminess.
