Preparing the Cheese Mixture

Cook the Chorizo
In a skillet over medium heat, add the chorizo. Cook until browned and fully cooked, breaking it up with a spoon, about 5-7 minutes. Remove from heat and set aside.

Melt the Cheese
In a medium saucepan, combine Chihuahua cheese, Monterey Jack cheese, and cream cheese. Cook over low heat, stirring frequently until melted and smooth, about 5-7 minutes.

Combine Ingredients
Once the cheese is melted, stir in the cooked chorizo. Mix well until combined and heated through.
Preparing the Tortillas

Warm the Tortillas
In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until soft and pliable.
Serving

Serve Queso Fundido
Transfer the melted cheese mixture to a serving dish. Garnish with sliced jalapeños, fresh cilantro, and diced tomatoes if desired. Serve immediately with warm corn tortillas on the side.
