Preheat the grill to medium-high heat. In a bowl, mix olive oil, garlic powder, paprika, salt, and black pepper. Rub this mixture over the chicken breasts.

In a large saucepan, bring chicken broth and salt to a boil. Add the rice, stir, and cover. Reduce heat to low and simmer for 18-20 minutes, or until the rice is cooked and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Add Milk and Cheese
Gradually whisk in the milk, ensuring no lumps form. Continue to cook, whisking constantly until the mixture thickens. Add the shredded cheddar cheese and cream cheese, stirring until melted and smooth.

Stir in the diced jalapeño and salt, adjusting seasoning to taste. Keep warm on low heat until ready to serve.
Assembling the Dish

On a serving plate, create a bed of rice, place sliced grilled chicken on top, and generously drizzle with queso sauce.
