Enchiladas

Preparation of Ingredients

    Cook Chicken or Beef

    In a skillet over medium heat, cook shredded chicken or beef until heated through and seasoned to taste. Set aside.

    Prepare Sides

    Cook rice and black beans according to package instructions. Prepare pico de gallo and guacamole.

Assembly of Enchiladas

    Soften Tortillas

    In a separate skillet, lightly warm corn tortillas one at a time until pliable.

    Fill Tortillas

    Place about 1/2 cup of the cooked chicken or beef and a sprinkle of cheddar cheese in the center of each tortilla. Roll tightly and place seam-side down in a baking dish.

    Top with Sauce

    Pour poblano sauce evenly over the enchiladas and top with remaining cheddar cheese.

Baking

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Bake the enchiladas uncovered for 20-25 minutes or until heated through and cheese is bubbly.

Serving

    Plate the Dish

    Remove enchiladas from oven and garnish with dollops of sour cream. Serve with cooked rice, black beans, pico de gallo, and guacamole on the side.
