Burrito Directions

    Prepare the Filling

    In a large bowl, mix cooked rice, black beans, shredded cheese, sour cream, salsa, and optional shredded chicken until well combined.

    Assemble the Burrito

    Lay a tortilla flat on a surface. Spoon about 1/4 of the filling mixture in the center of the tortilla. Fold in the sides and roll tightly from the bottom to form a burrito.

    Heat the Burrito

    Place the burrito seam-side down on a skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and heated through.

Taquito Directions

    Prepare the Filling

    In a bowl, combine shredded cheese and cooked chicken.

    Assemble the Taquitos

    Warm the corn tortillas slightly to make them pliable. Place about 2 tablespoons of the filling on one end of the tortilla and roll tightly. Secure with a toothpick if needed.

    Fry the Taquitos

    Heat oil in a frying pan over medium-high heat. Fry the taquitos seam-side down for 2-3 minutes until golden and crispy. Drain on paper towels.

Quesadilla Directions

    Prepare the Quesadilla

    Place one tortilla in a heated skillet. Sprinkle 1 cup of cheese evenly over the tortilla and add any optional chicken if desired.

    Cook the Quesadilla

    Top with another tortilla. Cook for about 3-4 minutes until the bottom tortilla is golden and the cheese is melted. Flip carefully and cook for an additional 3-4 minutes.

    Slice and Serve

    Remove from the skillet, let cool slightly, then cut into wedges. Serve with salsa or sour cream.
