Main Ingredients

Method

Preparation

  1. 1

    Rinse the Rice

Place the long grain white rice in a sieve or fine-mesh strainer and rinse under cold running water until the water runs clear. This removes excess starch and prevents the horchata from becoming too thick.

  2. 2

    Soak the Rice

In a large bowl, combine the rinsed rice and 4 cups of water. Add the cinnamon stick and let it soak for at least 4 hours, or overnight for best results. This allows the flavors to infuse.

Blending

  1. 3

    Blend the Mixture

After soaking, remove the cinnamon stick and transfer the rice and water mixture into a blender. Blend on high speed until the rice is finely ground, about 1-2 minutes.

  2. 4

    Strain the Blend

Pour the blended mixture through a fine-mesh strainer or cheesecloth into a large pitcher or bowl to remove the rice solids. Use a spatula to press down on the mixture to extract as much liquid as possible.

Finalizing the Horchata

  1. 5

    Add Remaining Ingredients

To the strained rice milk, add 1 cup of milk, 1 cup of sweetened condensed milk, 1 teaspoon of vanilla extract, and 2 tablespoons of sugar. Stir until well combined.

  2. 6

    Chill and Serve

If desired, chill the horchata in the refrigerator for at least 1 hour. Serve over ice, sprinkled with ground cinnamon on top. Enjoy!
