Method

Preparation of Meats

    Marinate the Meats

    In a large bowl, combine the asada, shredded chicken, birria, and pork tips. Add olive oil, salt, black pepper, cumin, chili powder, and garlic powder. Mix well, ensuring all meats are coated. Cover and marinate for at least 30 minutes.

    Cook the Meats

    Heat a grill or skillet over medium-high heat. Cook the marinated meats in batches until they are cooked through and have a nice char, approximately 5-7 minutes per side. Once cooked, remove from heat and let rest before slicing or shredding.

Vegetables and Assembly

    Prepare the Vegetables

    While the meats are cooking, dice the onion, chop the cilantro, and prepare the pineapple and mushrooms. Cut the pineapple into small chunks and slice the mushrooms.

    Sauté the Mushrooms

    In the same skillet used for the meats, add a little olive oil and sauté the mushrooms and diced onion until they are softened and slightly caramelized, about 5-7 minutes.

    Combine Ingredients

    In a large serving platter, combine the cooked meats, sautéed mushrooms and onions, pineapple chunks, and chopped cilantro. Drizzle with fresh lime juice and toss gently to combine.

Serving

    Serve with Tortillas

    Warm the tortillas on the grill or in a skillet. Serve the meat and vegetable mixture on top of the tortillas. Enjoy your Goyo Loco with additional lime wedges and cilantro as garnishes.
