Preparation

    Prepare the Chicken

    Trim any excess fat from the chicken breast and cut it into thin strips.

    Marinate the Chicken

    In a bowl, combine the chicken strips, olive oil, and fajita seasoning. Mix well to coat the chicken evenly. Cover and let marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Prepare the Vegetables

    While the chicken is marinating, slice the bell peppers and onion into thin strips.

Cooking

    Grill the Chicken

    Preheat your grill or grill pan over medium-high heat. Add the marinated chicken strips and grill for about 5-7 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly caramelized.

    Combine Chicken and Vegetables

    Once the chicken is cooked, remove it from the grill and add it to the skillet with the sautéed vegetables. Stir well to combine and heat through for another 2 minutes.

Serving

    Serve the Fajitas

    Warm the flour tortillas in a dry skillet over low heat. To serve, place a portion of the chicken and vegetable mixture onto each tortilla. Top with sour cream, guacamole, shredded cheese, and fresh cilantro as desired.
