Filling Preparation

    Combine Filling Ingredients

    In a mixing bowl, combine the shredded cooked chicken, chopped onion, chopped cilantro, salt, and black pepper. Mix well to combine all the ingredients.

Green Sauce Preparation

    Prepare Green Sauce

    In a saucepan, bring water to a boil. Add the tomatillos and jalapeños, and cook for about 10 minutes until they are tender. Drain and let cool slightly.

    Blend Sauce

    In a blender, combine the cooked tomatillos, jalapeños, minced garlic, lime juice, cilantro, and salt. Blend until smooth. Taste and adjust salt if needed.

Assembling Enchiladas

    Prepare Tortillas

    In a skillet, lightly heat the corn tortillas to make them pliable, about 30 seconds on each side.

    Fill Tortillas

    Place about 2-3 tablespoons of the chicken filling in the center of each tortilla. Roll them up tightly and place seam-side down in a greased baking dish.

    Add Sauce and Cheese

    Once all tortillas are filled and placed in the baking dish, pour the prepared green sauce evenly over the enchiladas. Sprinkle shredded cheese on top.

Baking

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.

Serving

    Serve

    Remove the enchiladas from the oven and let sit for a few minutes. Serve warm, topped with sour cream and sliced avocado if desired.
