    Cook the Filling

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

    Add Aromatics

    Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 3-4 minutes.

    Season the Meat

    Stir in the cumin, chili powder, salt, and black pepper. Cook for another 2 minutes to let the flavors meld.

    Add Cheese

    Remove from heat and stir in the shredded cheese until melted and combined with the meat mixture.

Assembly

    Prepare the Tortillas

    In a separate pan, lightly warm the corn tortillas over medium heat for about 30 seconds on each side to make them pliable.

    Fill the Tortillas

    Place a few tablespoons of the meat filling in the center of each tortilla. Roll them tightly and place seam-side down in a greased baking dish.

    Top with Sauce

    Pour the red enchilada sauce evenly over the rolled tortillas in the baking dish.

    Bake

    Cover the baking dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 20 minutes.

Serving

    Garnish and Serve

    Remove from the oven, uncover and let cool slightly. Top with sour cream, chopped cilantro, and sliced jalapeños before serving.
