In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat.

Add black beans and corn to the skillet, stirring until well combined. Remove from heat and mix in shredded cheddar cheese until melted and incorporated.
Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Stir in tomato sauce, water, chili powder, cumin, garlic powder, and salt. Bring to a simmer and let it cook for about 10 minutes, stirring occasionally.
Assemble the Enchiladas

Fill the Tortillas
Preheat your oven to 350°F (175°C). Take a corn tortilla, spoon about 1/3 cup of the beef filling into the center, roll it up tightly, and place it seam side down in a baking dish.

Continue with the remaining tortillas and filling until all are filled and placed in the dish.

Pour the enchilada sauce evenly over the rolled tortillas in the baking dish.
