    Prepare the tortillas

    Cut each corn tortilla into 6 equal triangles to create chip shapes.

    Heat the oil

    In a deep frying pan or pot, heat 2 cups of vegetable oil over medium-high heat until hot but not smoking.

    Fry the chips

    Carefully add a handful of tortilla triangles to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy.

    Drain and season

    Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate. Sprinkle with salt while still hot.

Salsa

    Chop the vegetables

    Dice the fresh tomatoes, red onion, and jalapeño pepper (removing seeds for less heat if desired).

    Mix the salsa

    In a mixing bowl, combine the diced tomatoes, red onion, jalapeño, and chopped cilantro.

    Add lime and salt

    Pour in the lime juice and sprinkle with salt. Stir well to incorporate all the ingredients.

    Taste and adjust

    Taste the salsa and adjust seasoning with additional salt or lime juice as needed.
