Caramel Preparation

    Make the Caramel

    In a small saucepan, combine the granulated sugar and water. Cook over medium heat until the sugar dissolves and turns a golden brown color, swirling the pan gently to ensure even cooking.

    Coat the Flan Dish

    Immediately pour the caramel into a round flan mold or individual ramekins, tilting to coat the bottom evenly. Set aside to let it harden.

    Blend the Flan Base

    In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and ground chipotle pepper. Blend until smooth and well combined.

    Pour Mixture into Mold

    Pour the blended flan mixture over the hardened caramel in the prepared mold or ramekins.

    Bake the Flan

    Preheat your oven to 350°F (175°C). Place the flan mold inside a larger baking dish and fill the outer dish with hot water to create a water bath. Bake for about 50-60 minutes, or until the flan is set and a knife inserted in the center comes out clean.

    Cool and Refrigerate

    Once baked, remove from the oven and let it cool at room temperature. Then refrigerate for at least 4 hours, preferably overnight.
