Prepare the Filling

Mix in Cheese and Seasoning
Remove from heat and stir in the grated cheddar and Monterey Jack cheeses, chopped cilantro, salt, and black pepper. Mix until combined and set aside.
Prepare the Peppers

Roast the Peppers
Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast in the oven until the skin is blistered and charred, about 20 minutes. Remove and let cool.

Stuff the Peppers
Once the peppers are cool, carefully peel off the charred skin. Make a slit down the side of each pepper and remove the seeds. Stuff each pepper with the beef and cheese mixture.

Heat the Oil
In a large frying pan, heat the oil over medium-high heat until hot.

Coat and Fry
Dip each stuffed pepper into the batter, allowing excess to drip off. Carefully place it in the hot oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Serve the fried chiles rellenos hot, topped with the tomato sauce. Enjoy!
