Marinade

Method

Marinade Preparation

  1. 1

    Combine Ingredients

In a large bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, salt, black pepper, and chopped cilantro until well combined.

  2. 2

    Marinate the Steak

Place the flank or skirt steak into a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

Cooking the Steak

  1. 3

    Preheat the Grill

Preheat your grill to high heat, around 450°F (232°C).

  2. 4

    Grill the Steak

Remove the steak from the marinade and let any excess marinade drip off. Place the steak on the hot grill and cook for about 4-6 minutes per side for medium-rare, or until it reaches your desired doneness.

  3. 5

    Rest the Steak

Once cooked, remove the steak from the grill and let it rest for 5-10 minutes before slicing.

Serving

  1. 6

    Slice and Serve

Slice the steak against the grain into thin strips. Serve on warm corn tortillas with sliced avocado, chopped onions, fresh cilantro, and lime wedges on the side.
