Method

Preparation

  1. 1

    Cook the Rice

In a medium saucepan, combine 1 cup of rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed.

  2. 2

    Prepare the Beans

In a small pot, heat 1 cup of black beans over medium heat. Season with salt, pepper, cumin, and garlic powder. Stir and let simmer for about 5 minutes until warmed through.

Cook the Proteins

  1. 3

    Cook the Beef

In a skillet over medium-high heat, add the ground beef. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain excess fat.

  2. 4

    Grill the Chicken and Shrimp

Season the grilled chicken breast and shrimp with salt, pepper, and any preferred spices. Grill chicken for 6-7 minutes on each side until cooked through. Grill shrimp for 2-3 minutes on each side until pink and opaque.

  3. 5

    Sauté the Onion

In the same skillet used for the beef, add sliced onion and sauté over medium heat until translucent, about 3-4 minutes.

Assembly

  1. 6

    Combine Ingredients

On a large plate, layer the cooked rice, ground beef, black beans, grilled chicken, and shrimp. Top with sautéed onions and drizzle queso sauce over the top.

  2. 7

    Prepare Guacamole Salad

In a bowl, mix chopped lettuce, diced tomato, and chopped avocado. Season with salt and serve as a side salad.
