    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot or Dutch oven, melt the butter over medium heat. Add the minced garlic and chopped shallots, and sauté until they are translucent and fragrant, about 3-5 minutes.

    Add Liquids and Tomato

    Pour in the white wine and clam juice, then add the diced tomato. Bring the mixture to a gentle simmer.

    Steam the Mussels

    Add the cleaned mussels to the pot, cover with a lid, and allow to steam for about 5-7 minutes, or until the mussels have opened up. Discard any mussels that remain closed.

    Season and Serve

    Stir in the chopped parsley, and season with salt and black pepper to taste. Serve the mussels in bowls with the broth, and enjoy with crusty bread.
