1. Cook the Rigatoni
In a large pot, bring salted water to a boil. Add the rigatoni giganti and cook until al dente, according to package instructions. Drain and set aside.
2. Sauté the Sausage
In a large skillet, heat olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.
3. Add Vegetables
Add the sliced bell pepper, red onion, and minced garlic to the skillet. Sauté until the vegetables are softened, about 4-5 minutes.
4. Combine Sauce and Rigatoni
Stir in the spicy tomato sauce and red pepper flakes. Add the drained rigatoni to the skillet and mix well to coat the pasta with the sauce. Season with salt and black pepper to taste.
5. Add Cheese and Serve
Remove from heat and sprinkle shredded mozzarella cheese on top. Cover the skillet for a few minutes until the cheese is melted. Serve hot and enjoy!
