    Prepare the Bread

    Preheat your oven to 400°F (200°C). Slice the baguette or Italian bread into 1/2 inch thick slices. Arrange the slices on a baking sheet.

    Toast the Bread

    Drizzle the bread slices with 2 tablespoons of extra virgin olive oil. Bake in the preheated oven for about 5-7 minutes, or until golden and crispy.

    Prepare the Topping

    While the bread is toasting, finely chop the tomatoes, red onion, and garlic. In a bowl, combine the chopped tomatoes, red onion, minced garlic, and torn basil leaves. Drizzle with the remaining 2 tablespoons of olive oil and season with salt and black pepper to taste.

    Assemble the Bruschetta

    Once the bread is toasted, remove it from the oven and let it cool slightly. Top each slice of bread with the tomato mixture and add small pieces of house-made mozzarella on top.

    Drizzle with a bit more olive oil if desired and serve immediately.
