Baked Camembert with Red Onion Marmalade, Garlic Foccacia Bread, and Grilled Figs

Preparation Steps

    Make the Red Onion Marmalade

    In a medium saucepan over medium heat, add olive oil and sliced red onions. Cook until onions are soft and translucent, about 10 minutes. Stir in brown sugar and balsamic vinegar, cooking for an additional 5-7 minutes until caramelized. Season with salt and black pepper to taste. Remove from heat and set aside.

    Prepare the Foccacia

    Preheat the oven to 375°F (190°C). Slice the Foccacia bread in half. In a small bowl, mix minced garlic with olive oil. Brush the garlic oil mixture onto the cut sides of the Foccacia. Place in the oven and bake for 10-12 minutes until golden and crispy.

    Grill the Figs

    While the Foccacia is baking, slice the figs in half and toss them with a drizzle of olive oil and fresh thyme. Heat a grill pan over medium heat and grill the figs cut side down for about 2-3 minutes until caramelized.

    Bake the Camembert

    Place the whole Camembert cheese in an oven-safe dish. Make shallow cuts in the top of the cheese and drizzle with olive oil. Bake in the oven for 15-20 minutes until melted and gooey.

    Serve

    Once everything is ready, serve the baked Camembert with the red onion marmalade on top, alongside the garlic Foccacia and grilled figs.
