    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, sugar, and vanilla extract. Heat over medium heat until the sugar is dissolved, stirring occasionally. Do not let it boil. Remove from heat and let it cool.

    Blend in Flavors

    Once the base has cooled, you can divide it into portions to create different flavors. For fruity sorbet, blend the fresh fruit with the base until smooth. For chocolate gelato, whisk in the cocoa powder. For coffee gelato, add brewed coffee to the base. For mint, steep the mint leaves in the base before straining them out.

    Chill the Mixture

    Cover the flavored mixtures and refrigerate for at least 2 hours or until thoroughly chilled.

Freezing

    Churn the Mixture

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the sorbet or gelato to a lidded container and freeze for at least 4 hours or until firm.
