1. Cook the Pasta

In a large pot of salted boiling water, cook the Creste di Gallo pasta according to package instructions until al dente. Drain and set aside.

2. Prepare the Sausage

In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.

3. Add Garlic and Spinach

Add minced garlic to the skillet and sauté for 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.

4. Combine Ingredients

Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften. Season with salt and black pepper.

5. Mix with Pasta

Add the cooked pasta to the skillet and toss everything together. Cook for an additional 2 minutes to heat through.

6. Serve

Serve hot, topped with freshly grated Parmesan cheese.
