    Make the Biscuits

    Preheat the oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

    Prepare the Gravy

    In a skillet over medium heat, cook the breakfast sausage until browned. Remove the sausage and drain excess fat, leaving about 2 tablespoons in the skillet. Stir in the flour to make a roux, cooking for about 1 minute. Gradually whisk in the milk, stirring until thickened. Season with salt, black pepper, and red pepper flakes. Add the cooked sausage back to the skillet and mix well.
