Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Soak the Potatoes
Place the cut potato strips in a bowl of cold water. Soak for at least 30 minutes to remove excess starch.

Dry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels to remove as much moisture as possible.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add a handful of potato strips to the hot oil. Fry in batches for about 4-5 minutes or until they are golden brown and crispy.

Drain and Season
Remove the fries from the oil and place them on paper towels to drain excess oil. While they are still hot, sprinkle with salt, black pepper, and garlic powder to taste.
