Prepare the Beef
Season the beef chuck roast with salt and black pepper on all sides.

Sear the Beef
In a large skillet, heat a little oil over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side.

Cook in the Slow Cooker
Transfer the seared beef to a slow cooker. Add the sliced onion, minced garlic, Worcestershire sauce, and beef broth. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is very tender.

Shred the Beef
Once cooked, remove the beef from the slow cooker and let it rest for a few minutes. Shred the beef with two forks.

Prepare the Sandwiches
Slice the French rolls or baguette in half. Place a generous amount of shredded beef on the bottom half of each roll. Top with Swiss or provolone cheese.

Melt the Cheese
Place the sandwiches under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.
