Curdle the Milk
Remove the pot from the heat and add the white vinegar or lemon juice. Stir gently for a few seconds, then let it sit for about 5-10 minutes. The curds will begin to form.

Separate Curds and Whey
Line a colander with cheesecloth and pour the curdled milk mixture into it. Allow the whey to drain for about 10 minutes.

Rinse the Curds
Rinse the curds under cold running water to remove any residual whey and vinegar/lemon flavor. Gather the cheesecloth and gently squeeze out excess water.

Season
Transfer the curds to a bowl and mix in the salt. Adjust seasoning to taste.

Store the cottage cheese in an airtight container in the refrigerator for up to a week.
