    Prepare Milk

    In a large pot, pour the whole milk and heat it gently over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Remove the pot from heat and slowly add the white vinegar. Stir gently for about 1 minute. The milk will begin to curdle and separate into curds and whey.

    Let it Set

    Allow the mixture to sit for about 10 minutes for the curds to form completely.

    Strain the Curds

    Line a colander with cheesecloth and carefully pour the curds and whey into it. Let it drain for about 15-20 minutes.

    Season and Shape

    Once drained, sprinkle salt over the curds and mix gently. If using rennet, add it at this stage and mix. Transfer the curds to a mold or shape by hand.

    Press and Age (Optional)

    If you like firmer cheese, press the curds under a weight for a few hours. For aged cheese, allow it to sit in a cool place for several days.
