    Prepare the Potatoes

    Peel the Russet potatoes and grate them using a box grater or food processor. Rinse the grated potatoes under cold water to remove excess starch, then drain and pat dry with a clean kitchen towel.

    Sauté the Onion

    Finely chop the onion and heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Cook the Hash Browns

    Add the grated potatoes to the skillet with the sautéed onions. Drizzle with the remaining olive oil, and season with salt, black pepper, garlic powder, and paprika. Cook for about 5-7 minutes without stirring until the bottom is crispy.

    Flip and Finish

    Carefully flip the hash browns using a large spatula or by dividing them into sections. Cook for an additional 5-7 minutes until the other side is golden brown and crispy. Remove from heat, garnish with fresh parsley, and serve immediately.
