    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels.

    Marinate

    Soak the catfish fillets in buttermilk for about 30 minutes to enhance flavor and moisture.

    In a shallow dish, mix together the cornmeal, flour, cajun seasoning, salt, and black pepper.

    Coat the Fillets

    Remove the catfish from the buttermilk, allowing excess to drip off, and dredge in the cornmeal mixture until well coated.

    In a large skillet, heat the oil over medium-high heat until hot but not smoking.
