1. Prepare the Shrimp
Butterfly the shrimp by slicing them down the middle, being careful not to cut all the way through. This will allow them to open up when cooked.
2. Set Up Breading Station
Prepare three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, garlic powder, paprika, salt, and pepper.
3. Bread the Shrimp
Coat each butterflied shrimp in flour, dip into the beaten eggs, and then coat with the breadcrumb mixture, pressing gently to adhere.
4. Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (around 350°F or 175°C).
5. Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry until golden brown and cooked through, about 2-3 minutes per side.
6. Drain and Serve
Remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges.
