Burger Preparation

Prepare the Beef
In a large mixing bowl, combine the ground beef with salt and black pepper. Mix gently until just combined, being careful not to overwork the meat.

Form the Patties
Divide the meat mixture into four equal portions and shape them into burger patties, making a slight indentation in the center of each to prevent them from puffing up while cooking.

Cook the Patties
Cook the patties for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of Pepper Jack cheese on each patty to melt.
Prepare the Poblano Mayo

Roast the Poblano Peppers
Roast the poblano peppers over an open flame or under the broiler until the skin is charred and blistered. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes.

Blend the Mayo
After steaming, peel the skin off the poblano peppers and remove the seeds. Blend the roasted poblano peppers with the mayonnaise until smooth. Add salt to taste.
Assembling the Burger

Toast the Buns
Lightly toast the burger buns on the grill or in a toaster until golden brown.

Spread a generous amount of poblano mayo on the bottom half of each bun. Place the cooked burger patty on top, followed by jalapeños and a scoop of guacamole. Finish with the top half of the bun.
