Preparation

Mashing

1. Prepare the Mash

In a large mash tun, heat 5 gallons of water to 162°F (72°C). Add the pale malt and caramel malt, stirring to combine.

2. Mash Rest

Maintain the mash temperature at 152°F (67°C) for 60 minutes to convert the starches into fermentable sugars.

3. Sparging

After the mash rest, sparge the grains with hot water to collect approximately 5 gallons of wort.

Boiling

4. Boil the Wort

Bring the collected wort to a boil. Once boiling, add 1 oz of bittering hops and boil for 60 minutes.

5. Add Flavor Hops

With 15 minutes left in the boil, add 0.5 oz of flavor hops.

6. Add Aroma Hops

Add 0.5 oz of aroma hops in the final 5 minutes of the boil.

Fermentation

7. Cool the Wort

After boiling, cool the wort quickly using a wort chiller until it reaches 65°F (18°C).

8. Pitch Yeast

Transfer the cooled wort into the fermentation vessel and pitch the lager yeast.

9. Ferment

Seal the fermentation vessel and ferment at 50°F (10°C) for 2-3 weeks.

Bottling

10. Prepare for Bottling

After fermentation is complete, dissolve 3 oz of priming sugar in 2 cups of boiling water. Cool this solution.

11. Bottle the Beer

Transfer the beer into bottles, adding the cooled priming sugar solution to carbonate the beer. Cap the bottles.

12. Condition

Let the bottles condition at room temperature for 1-2 weeks.
