Prepare the Potatoes
Peel the potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the potato strips under cold water to remove excess starch. Pat them dry with a clean towel to ensure they are not wet before frying.

Soak the Potatoes
Place the cut potato strips in a large bowl of cold water and let them soak for at least 30 minutes. This helps to make the fries crispier.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C). You can use a thermometer to check the temperature or drop a small piece of potato in to see if it sizzles.

Carefully add a handful of soaked and dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry them for about 5-7 minutes, or until they are golden brown and crispy.

Using a slotted spoon, remove the fries from the oil and drain them on a plate lined with paper towels. While they are still hot, sprinkle them with salt and any optional seasonings you prefer, such as paprika, garlic powder, or black pepper.
