Roasting Poblano Chili

    Preheat Oven

    Preheat the oven to 400°F (200°C).

    Roast Peppers

    Wash and dry the poblano peppers. Place them on a baking sheet and drizzle with olive oil. Roast in the preheated oven for about 20-25 minutes, turning occasionally, until the skins are blistered and charred.

    Steam Peppers

    Once roasted, remove the peppers from the oven and place them in a bowl covered with plastic wrap for about 10 minutes to steam. This will make it easier to peel off the skins.

    Prepare Peppers

    Once cooled, peel the skins off the peppers, remove the seeds, and slice into strips.

Onion Strings

    Prepare Onions

    Slice the large onion into thin rings.

    Soak Onions

    Soak the onion rings in buttermilk for at least 30 minutes to tenderize them.

    Prepare Coating

    In a bowl, mix together the flour, cornstarch, and salt.

    Heat Oil

    Heat the vegetable oil in a deep pan over medium-high heat.

    Fry Onions

    Take the soaked onion rings and toss them in the flour mixture until fully coated. Fry them in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels.

Making the Chipotle Mayo

    Prepare Chipotle Mayo

    In a mixing bowl, combine the mayonnaise, chipotle peppers (finely chopped), and lime juice. Mix well until smooth.

Assembling the Burger

    Form Patties

    In a bowl, mix the ground beef with salt and black pepper. Form into 4 equal patties.

    Cook Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness.

    Toast Buns

    Toast the burger buns on the grill or in the skillet for 1-2 minutes until golden brown.

    Assemble Burger

    Assemble each burger by placing a patty on the bottom half of a bun, topping with roasted poblano strips, crispy onion strings, and a generous dollop of chipotle mayo. Place the top half of the bun on top.
