Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Bacon Cooking

  1. 2

    Cook the Bacon

In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove bacon from the skillet and place on a paper towel-lined plate to drain excess fat.

Cheese Sauce Preparation

  1. 3

    Make the Cheese Sauce

In the same skillet used for the bacon, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.

  2. 4

    Add Milk

Gradually whisk in the milk, stirring constantly until the mixture thickens, about 3-4 minutes.

  3. 5

    Incorporate Cheeses

Reduce heat to low, then stir in the cheddar cheese and cream cheese until melted and smooth. Season with garlic powder, onion powder, salt, and black pepper.

Combine Ingredients

  1. 6

    Combine Pasta and Chicken

In a large bowl, combine the cooked macaroni, shredded chicken, and buffalo sauce. Stir until well combined.

  2. 7

    Mix in Cheese Sauce

Pour the cheese sauce over the macaroni mixture and stir until everything is evenly coated.

  3. 8

    Add Bacon

Fold in the crispy bacon, reserving some for topping.

Serving

  1. 9

    Serve and Garnish

Transfer the buffalo bacon chicken mac and cheese to a serving dish. Top with reserved bacon and diced scallions before serving.
