    Prepare the Steak

    Season the Colorado sirloin steaks with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned steaks and sear for about 4-5 minutes on each side, or until desired doneness.

Bourbon Glaze

    Make the Glaze

    In a saucepan, combine bourbon, soy sauce, brown sugar, minced garlic, and grated ginger. Bring to a simmer over medium heat.

    Thicken the Glaze

    In a small bowl, mix cornstarch and water until smooth. Add to the simmering bourbon mixture and stir until thickened, about 2-3 minutes. Remove from heat and set aside.

Mashed Potatoes

    Cook the Potatoes

    Place the peeled and quartered potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Broccoli

    Prepare the Broccoli

    In a separate pot, bring water to a boil. Add broccoli florets and cook for 3-4 minutes until bright green and tender-crisp.

    Sauté the Broccoli

    Drain the broccoli and heat olive oil in the same pot. Add the broccoli, season with salt, and sauté for 2-3 minutes until slightly caramelized.
