For the Apple Pie

    Prepare the Pie Crust

    In a large bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the granulated sugar, then add cold water, one tablespoon at a time, mixing until the dough forms a ball. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Prepare the Filling

    Peel, core, and slice the Granny Smith apples. In a large bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and vanilla extract. Set aside to allow the flavors to meld.

    Assemble the Pie

    Preheat the oven to 425°F (220°C). Roll out one dough disc on a floured surface to fit your pie dish. Place it in the dish and fill with the apple mixture. Roll out the second dough disc and place it over the filling. Seal and flute the edges together. Cut slits in the top crust for steam to escape.

    Egg Wash

    Beat the egg and brush it over the top crust for a nice golden color.

    Bake the Pie

    Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 30-35 minutes, or until the apples are tender and the crust is golden brown.
