    Prepare the vegetables

    Thinly slice the onions and mushrooms. If you're using jalapenos, slice them into rings.

    Cook the onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 10-15 minutes, stirring occasionally, until the onions are caramelized and golden brown.

    Cook the mushrooms

    Push the caramelized onions to one side of the skillet. Add the remaining tablespoon of olive oil and the sliced mushrooms. Season with salt and pepper, then sauté for about 5-7 minutes until the mushrooms are tender.

Cooking the Steak

    Cook the steak

    In the same skillet with the onions and mushrooms, increase the heat to medium-high. Add the shaved sirloin steak and season with salt and pepper. Cook for about 3-5 minutes, stirring frequently, until the steak is browned and cooked through.

    Mix the caramelized onions and mushrooms with the cooked steak in the skillet, ensuring everything is well combined and heated through.

Assembling the Sandwich

    Prepare the hoagie rolls

    Slice the hoagie rolls lengthwise, making sure not to cut all the way through. Optionally, toast the rolls on a grill or in an oven for a few minutes until warm.

    Assemble the sandwich

    Place a generous portion of the steak, onion, and mushroom mixture into each hoagie roll. Top with 2 slices of American cheese for each sandwich. If you’re using jalapenos, add them on top of the cheese.

    If desired, place the assembled sandwiches under a broiler for 1-2 minutes, or until the cheese is melted and bubbly.
