    Sauté Vegetables

    In a large pot or tagine, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

    Add Root Vegetables

    Stir in the carrots and cook for another 5 minutes, until slightly tender.

    Incorporate Remaining Vegetables

    Add the zucchini, bell pepper, and eggplant. Stir and cook for about 5 more minutes, until the vegetables begin to soften.

    Combine Spices and Liquids

    Stir in the chickpeas, diced tomatoes, vegetable broth, cumin, coriander, cinnamon, paprika, salt, and black pepper.

    Simmer the Tagine

    Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 25-30 minutes, or until the vegetables are tender.
