Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Allow them to soak overnight.

    Prepare the Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, and salt. Pulse until a coarse mixture forms.

    Add Baking Powder and Flour

    Transfer the mixture to a bowl. Add baking powder and flour, mixing until well combined. If the mixture is too wet, add a little more flour.

    Form the Falafel Balls

    Using your hands, form small balls (about 1.5 inches in diameter) from the mixture.

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until hot.

    Fry the Falafel

    Carefully add the falafel balls to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce.
