Marinate the Chicken
In a large bowl, combine olive oil, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper. Add chicken thighs and coat them evenly. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Cook the Chicken
Preheat a vertical rotisserie or grill. Thread the marinated chicken onto the rotisserie skewer. Cook until the chicken is nicely charred and cooked through, about 15-20 minutes. Alternatively, you can grill the chicken on a BBQ or stovetop grill pan.

Prepare Garlic Sauce
In a small bowl, mix tahini and yogurt with lemon juice until smooth. Adjust seasoning with salt to taste. You can also add minced garlic for extra flavor.

Serve
Once the chicken is cooked, slice it thinly. Serve in warm pita bread topped with garlic sauce and chopped fresh parsley.
