Baklava Preparation

    Prepare the Nut Filling

    In a food processor, combine the walnuts, almonds, sugar, and cinnamon. Pulse until the nuts are finely chopped but not powdered. Set aside.

    Prepare the Filo Pastry

    Preheat your oven to 350°F (175°C). Melt the butter in a saucepan. Lay out one sheet of filo pastry on a clean surface and brush it lightly with melted butter. Repeat this process, stacking 8 sheets of filo, brushing each layer with butter.

    Assemble the Baklava

    Spread a layer of the nut mixture evenly over the top layer of filo. Add 4 more layers of buttered filo on top of the nuts, repeating the process. Continue layering filo and nut mixture until all ingredients are used, finishing with a top layer of buttered filo.

    Cut and Bake

    Using a sharp knife, cut the assembled baklava into diamond or square shapes. Bake in the preheated oven for about 45-50 minutes or until golden brown.

    Prepare the Syrup

    While the baklava is baking, combine honey, water, and sugar in a saucepan. Bring to a boil, then reduce heat and let simmer for about 10 minutes. Remove from heat and let cool.

    Finish the Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava. Allow it to sit for several hours or overnight to absorb the syrup before serving.
