    Prepare the Lobster Stock

    In a large pot, melt the butter over medium heat. Add the lobster shells and sauté for about 5 minutes until they turn pink. Add the onion, carrot, celery, and garlic, and cook for another 5 minutes until the vegetables are softened.

    Stir in the tomato paste and cook for 2 minutes. Pour in the white wine and scrape the bottom of the pot to deglaze. Let it simmer for about 10 minutes.

    Add Stock and Simmer

    Add the fish stock and season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Strain the Stock

    After simmering, strain the soup through a fine-mesh sieve into a clean pot, discarding the solids.
