Mushroom & Onion Demi-Glace

Method

Cooking Instructions

  1. 1

    Prepare the Ribeye Steak

Allow the ribeye steak to come to room temperature for about 30 minutes. Preheat the grill to high heat.

  2. 2

    Season and Grill

Brush the steak with olive oil, then season generously with salt and black pepper. Grill for about 5-7 minutes on each side for medium-rare. Remove from grill and let rest.

  3. 3

    Make Truffled Creamed Potatoes

Boil peeled and cubed potatoes until tender. Drain and return to pot. Add heavy cream, truffle oil, butter, and salt. Mash until smooth and creamy.

  4. 4

    Sauté Green Beans

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add green beans and cook until tender, about 5-7 minutes. Season with salt and pepper.

  5. 5

    Prepare Mushroom & Onion Demi-Glace

In a saucepan, melt butter over medium heat. Add diced onion and sliced mushrooms, cooking until softened. Pour in red wine and beef stock, simmer until reduced by half. Season with salt and pepper.

  6. 6

    Serve

On a plate, serve a bed of truffled creamed potatoes, top with grilled ribeye steak, sautéed green beans on the side, and drizzle with mushroom & onion demi-glace.
