Prepare the Maque Choux
In a large skillet, melt half of the butter over medium heat. Add the diced onion, bell pepper, and celery, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

Add Corn and Tasso
Add the corn and tasso ham to the skillet. Season with Cajun seasoning, salt, and black pepper. Stir well and cook for 10-15 minutes, allowing the flavors to meld. Keep warm.

Grill the Redfish
Preheat your grill to medium-high heat. Season the redfish fillets with salt, pepper, and a drizzle of lemon juice. Grill the fish for about 4-5 minutes per side, or until cooked through and flaky.

Assemble the Dish
On each plate, spoon a generous amount of the tasso and corn maque choux. Top with a grilled redfish fillet and three jumbo shrimp. Drizzle with any leftover butter from cooking the shrimp.
