Cooking Instructions

  1. 1

    Prepare the Maque Choux

In a large skillet, melt half of the butter over medium heat. Add the diced onion, bell pepper, and celery, and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

  2. 2

    Add Corn and Tasso

Add the corn and tasso ham to the skillet. Season with Cajun seasoning, salt, and black pepper. Stir well and cook for 10-15 minutes, allowing the flavors to meld. Keep warm.

  3. 3

    Grill the Redfish

Preheat your grill to medium-high heat. Season the redfish fillets with salt, pepper, and a drizzle of lemon juice. Grill the fish for about 4-5 minutes per side, or until cooked through and flaky.

  4. 4

    Prepare the Shrimp

In a separate pan, melt the remaining butter over medium heat. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Drizzle with additional lemon juice and season with salt and pepper.

  5. 5

    Assemble the Dish

On each plate, spoon a generous amount of the tasso and corn maque choux. Top with a grilled redfish fillet and three jumbo shrimp. Drizzle with any leftover butter from cooking the shrimp.
