Spring Rolls Preparation

    Prepare the Filling

    In a large bowl, combine black beans, shredded chicken, corn, shredded cheese, diced bell pepper, chopped cilantro, cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Wrap the Spring Rolls

    Lay a spring roll wrapper on a clean surface with a corner facing you. Place about 2-3 tablespoons of the filling mixture near the bottom corner. Fold the bottom corner over the filling, then fold in the side corners, and roll tightly to form a spring roll. Repeat with remaining wrappers and filling.

    Cook the Spring Rolls

    Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil. Place the spring rolls seam-side down in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy. Remove and let cool on a paper towel.

Chipotle Ranch Sauce Preparation

    Make the Sauce

    In a small bowl, mix together ranch dressing, chipotle in adobo sauce, and lime juice until well combined. Adjust seasoning with additional lime juice or chipotle, if desired.
