Pasta

Sausage and Vegetables

Method

Preparing the Pasta

  1. 1

    Cook the Rigatoni

In a large pot, bring salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside.

Cooking the Sausage and Vegetables

  1. 2

    Sauté the Sausage

In a large skillet over medium heat, add the Italian sausage. Cook until browned and cooked through, about 7-10 minutes. Remove the sausage from the skillet and set aside.

  2. 3

    Caramelize the Onions

In the same skillet, add olive oil and sliced onions. Cook over medium-low heat, stirring occasionally, until they are soft and caramelized, about 15 minutes.

  3. 4

    Add Peppers

Once the onions are caramelized, add the sliced red and green bell peppers to the skillet. Cook for an additional 5-7 minutes until the peppers are tender.

Combining Ingredients

  1. 5

Mix in the Sauce and Pasta

Return the cooked sausage to the skillet with the onions and peppers. Pour in the pomodoro sauce and stir to combine. Let the mixture simmer for about 5 minutes.

  2. 6

    Toss with Pasta

Add the cooked rigatoni to the skillet and toss everything together until the pasta is evenly coated with the sauce and ingredients. Cook for an additional 2-3 minutes to heat through.

  3. 7

    Finish and Serve

Stir in fresh basil and top with grated Parmesan cheese before serving. Adjust seasoning with salt and pepper to taste.
