Crust Preparation

Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

Bake the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let cool.

Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add granulated sugar, sour cream, and vanilla extract, mixing until well combined.

Add Eggs and Cornstarch
Add the eggs one at a time, mixing on low speed after each addition until just combined. Finally, add the cornstarch and mix until smooth.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for about 60-70 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.

Cool and Chill
Remove the cheesecake from the oven and let it cool to room temperature. Then, chill in the refrigerator for at least 4 hours or overnight.

Cool the Sauce
Remove from heat and allow the sauce to cool completely before serving.

Once the cheesecake is chilled, remove it from the springform pan. Slice and serve topped with the strawberry sauce.
