Preparing the Buffalo Tenders

Prepare the Chicken
Cut the boneless chicken breasts into tender-sized strips, about 1 inch wide.

Make the Breading
In a large bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

Coat the Chicken
Dip each chicken strip first into the wet mixture, allowing excess to drip off, then coat in the dry mixture until fully covered.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Tenders
Carefully add the coated chicken strips to the hot oil, frying in batches if necessary. Cook for about 5-7 minutes on each side, or until golden brown and cooked through.

Coat in Buffalo Sauce
Once cooked, remove the tenders from the oil and drain on paper towels. In a large bowl, toss the hot tenders with the buffalo sauce until evenly coated.
Making the Bleu Cheese Dressing

Mix the Ingredients
In a mixing bowl, combine the mayonnaise, sour cream, crumbled bleu cheese, lemon juice, garlic powder, salt, black pepper, and milk. Stir well until smooth.

Chill the Dressing
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Serving

Prepare the Plate
Arrange the fried buffalo tenders on a serving platter with celery sticks on the side. Serve with the chilled bleu cheese dressing for dipping.
